Production Methodology

Don Julio González founded his distillery in 1942 in Jalisco, and in 2006 he and his family planted what turned out to be their final agave field. That harvest was distilled, barrelled and set aside rather than released, and Última Reserva was built around it for the distillery's eightieth anniversary. The tequila is aged thirty-six months, placing it in the extra añejo category, and is held in a solera system — a fractional blending arrangement in which casks are never fully emptied, so tequilas of different characters are continually combined and the original harvest stays at the centre of the blend rather than being drawn down to nothing. The wood is used in two stages: a rest in oak that previously held bourbon, followed by a finish in casks seasoned with Madeira wine. It is made from 100% Blue Weber agave and bottled at 40% alc./vol.
