  • Cold Fermentation: Utilizing a unique cold-settling technique introduced in the 1950s, the house preserves the delicate primary fruit aromatics and prevents oxidative weight.
  • The Red Wine Addition: Only 6–7% of the blend is vinified as still red Pinot Noir, sourced from the Grande Vallée de la Marne, to provide color and depth without overwhelming the palate.
  • Lees Aging: Matured for at least 3 years in the house's historic chalk cellars to develop a creamy, fine-grained mousse.
