It is aged 15 years in deep-charred oak and bottled at 107 proof (53.5% ABV), the same strength as the 10 Year, so the extra years in wood are what set it apart. Wheat stands in for rye, and at 15 years the oak has fully integrated into a rich, full-bodied whiskey. The wheated recipe traces to Julian "Pappy" Van Winkle Sr., who built it at Stitzel-Weller in Louisville; it passed through his son Julian Jr. and grandson Julian Van Winkle III, who brought production to Buffalo Trace in 2002. This 15 Year was introduced in 2004 to replace the Old Rip Van Winkle 15 Year, and it has anchored the Pappy tier since. Production Methodology

Pappy 15 is built on Buffalo Trace's wheated mash bill, with wheat in place of rye alongside corn and malted barley; the exact ratio is not published, but estimates cluster around 16% wheat. Barrels destined for the Pappy bottlings are selected early in their life from the heart of the warehouse and monitored over time so that none becomes over-oaked — a barrel drifting that way is moved to the next closest batch age instead. The 15 Year matures in deep-charred heavy oak for a decade and a half, then is bottled at 107 proof. Like the rest of the line, its barrels begin as the same Buffalo Trace wheated stock that becomes Weller.
