The blend is assembled from eaux-de-vie distilled in Grande Champagne, whose chalk soils give spirit that rewards very long ageing, and held in tierçons — oak casks originally built large and thin-walled for cart transport, now kept because a century-old cask gives almost no tannin and lets the spirit breathe slowly. The casks sit in cellars of different humidity across the estate, which is how a constant house style survives a terroir that changes every year. Each cellar master selects from what predecessors laid down, blends the current expression, and reserves the eaux-de-vie their successors will use — a chain the house dates to 1874 and has never broken.

A tierçon is a large, thin-walled Limousin oak cask, originally built for transporting spirit by cart. Rémy Martin keeps very old ones for this cognac: aged wood gives up almost no tannin, so the exchange between cask and spirit stays slow over decades.

Why is the Louis XIII decanter shaped the way it is?

The Baccarat crystal decanter copies a sixteenth-century metal flask recovered from the site of the Battle of Jarnac, fought in 1569 near the town of Cognac. The spiked fins and fleur-de-lis detailing come from that original.
